5.  FORTIFICATION WITH VITAMINS & MINERALS

A. VITAMINS

Vitamins may be defined as organic compounds occurring in small quantities in the different natural foods and necessary for the growth and maintenance of good health in human beings and animals. If vitamins are not present in sufficient quantities in the diet, vitamin deficiency diseases occur.

Vitamins may be classified broadly into two groups:

(a) Fat soluble vitamins i.e., vitamins soluble in fats and fat solvents but insoluble in water & 
(b) Water Soluble vitamins i.e., vitamins soluble in water but insoluble in fats or fat solvents.

The following are the brief description of these vitamins :-

1) Fat Soluble Vitamins
a. Vitamin A
Vitamin A is required to help keep the skin and mucous membranes healthy and to protect against night blindness. Vitamin A is also essential for normal bone formation.
b. Vitamin D
Vitamin D is required to help the body to absorb calcium and phosphorus and to help build strong teeth and bones.
c. Vitamin E
Vitamin E is essential for normal reproduction in animals and man.
d. Vitamin K
Vitamin K is essential for blood coagulation.
2)Water Soluble Vitamins

a. Vitamin C :

Vitamin C or ascorbic acid is essential for the formation of collagen and intercellular cement substance in the capillaries, teeth, bones etc. It is also required for the conversion of phenylalanine to tyrosine and for the oxidation of tyrosine. It helps in the absorption of iron and also essential for rapid healing of wounds, as it helps in the formation of connective tissues. It is required to strengthen the walls of blood vessels and to provide resistance to infection and diseases.

b. Vitamin B Complex :

1) Vitamin B1 or thiamin is required for normal appetite and digestion, healthy nervous system and to help change good carbohydrates into energy for work.

2) Vitamin B2 or riboflavin is required to help cells use oxygen, to keep vision clear and smoother skin without scaling around mouth and nose or cracking at the corner of the mouth.

3) Necotinic acid or niacin is essential for the normal functioning of the skin, intestinal tract and the nervous system.

4) Pyridoxin or vitamin B6 acts as a co-enzyme for a number of enzyme systems for the conversion of glutamic acid, amino acids, tryptopan, etc. and in the catabolism of threonine, serine and hemoserine. It also increases immune response.

5) Pantothenic acid is essential for the growth of infants and children. It is also involved in many acetylation, condensing and transfer reactions.

6) Folic acid is essential for the maturation of red blood cells. It also acts as an intermediate carrier in the transfer of single carbon groups in biological reactions.

7) Vitamin B12 promotes the maturation of erythroid cells. It also acts on the other marrow elements as shown by the increase in while cell count and blood platelet count. It stimulates the appetite and general health of human beings and cures the neurological symptoms of pernicious anaemia. Vitamin B12 is also required for a number of bio-chemical functions in the body.
